You have to eat a green thing, so why not smother it in cream, parmesan and bacon? This recipe is sure to be the most popular dish on the table this holiday season. Here is the next in our series of delicious holiday dishes from the incredibly talented René Rodriguez, the Top Chef Canada season 4 winner.
Quick Creamed Spinach with Bacon
This recipe comes from Top Chef Canada winner René Rodriguez, in collaboration with Future Shop and LG Appliances. Serves 8-10.
4 cups firmly packed baby spinach (cleaned)
2 minced shallots
1/2 cup diced bacon
1 tsp grainy Dijon
1/2 cup 35% cream
1/2 cup crème fraîche
2 tablespoon olive oil
1/2 cup grated parmesan
In large pan, add olive oil and fry the shallots and bacon for 5 minutes under low heat. Add spinach and wilt for 2 minutes. Add mustard and cream and cook 3 minutes. Add crème fraîche and transfer spinach to small baking dish.
Sprinkle parmesan on top of spinach and bake under broiler for 3 minutes. Serve warm.
