Snack Plating for the Holiday Week

Ah, the week between Christmas and New Years, you just don’t feel like cooking, especially after a high-powered holiday.There are only a few times of year when the fridge is as overflowing as it will be over the next few days. Magazines are filled with tips for using up all that turkey. Recipes for turkey hash, turkey soup, turkey a la king…We prefer a simpler approach and just use whatever is already on hand to throw together a snack plate.

We always keep different breads, crackers, olives, pickled veggies, cheeses, nuts and charcuterie on hand for cobbling together quick antipasto plates. It’s more fun than pb&j for lunch, easier than cooking dinner and more satisfying for a Netflix binge session than popcorn.

Typical antipasto bar items might including lupini beans and stuffed cherry bomb peppers, maybe slices of cold turkey breast, or chiilled lamb slices with mint sauce, or ham, sliced thin with a choice of your favourite rustic mustards. How about some proscuitto or cold roast pork with fig jam and a crusty baguette? Devilled eggs come together in no time, and are a perfect snack plate addition. And let’s not forget the cheese! Look no further than Ontario’s own Monforte Dairy  the internationally renown  Fifth Town Cheese. For those of you that have a nostalgic connection to Boursin, why not make your own? It’s super easy and a fun family project, not to mention far easier on the pocketbook than the real thing.

Finally you will want to round out your platter with an assortment of fresh fruits and crunchy veggies, with a company of dips and chutneys. We always make sure we have a big jar of homemade chutney on hand, like this fantastic mango chutney from Jamie Oliver, it goes with just about everything and is oh so easy to make.

If you are entertaining on New Years Eve, a spread of beautiful and healthful snack plates is the way to go, as it’s always a good idea to make sure everyone has a little something in their tummies, especially if people are imbibing until after midnight!
Just make sure you and your guests enjoy the evening’s festivities responsibly. We leave 2019 wishing you all the best for 2020, and, as a little bonus, here’s a recipe for that fake Boursin that will be the talk of the table!

Homemade Boursin
8 oz cream cheese
4 oz goat cheese
4 oz butter
3 cloves garlic, chopped.
2 tablespoons chopped parsley
1/4 teaspoon each of: basil, chives, sage, tarragon, salt, pepper

Bring the cream cheese, goat cheese and butter to room temperature and cream together in a food processor. Add the garlic and herbs and salt and pepper and process again until all is combined and smooth. Taste, and adjust seasoning if desired. Remove from food processor and pack in ramekins, or a mason jar or Weck jar. Keep refrigerated.
