Hot Pot

While the hot pot is kept simmering, ingredients are placed into the pot and are cooked at the table. Typical hot pot dishes include thinly sliced meat, leafy vegetables, mushrooms, wontons, egg dumplings, and seafood. The cooked food is usually eaten with a dipping sauce. Such a simple fun way to eat. Traditionally you would need a portable gas burner set up in the middle of the table. A pot of stock would be here simmering and all the ingredients laid out around. Then each person would pick their own ingredients and cook them in the broth. Why not do a hot pot for supper tonight? You don’t need to go our and buy a portable burner, you can do a simplified version on your stove where the only prep required is minimal and the end result is a symphony of flavours.

Heat up some chicken stock, add a can of coconut milk and bring up to the simmer. Slice a chicken breast and add to the pot, or thin sliced beef or pork. You could use crab meat, oysters and shrimp to make a seafood version. Udon noodles and dumplings can be found at most grocery stores or in Chinatown. Clean some bok choy, cube tofu, slice a few shiitakes and toss in the pot. Put a handful of bean sprouts in each bowl, pour soup over and garnish with crushed peanuts, scallions and lime wedges. The fastest way to get dinner on the table without using your phone.
