Zei is an exceptional mono varietal olive oil that comes to us from Turkey’s well-known Ayvalik region, along the country’s North East Aegean coast. For centuries this region has been recognized for its production of some of the Aegean’s finest olive oils. The Ayvalik terroir, comprised of the area’s soil composition, elevation, its slopes, and the northern and eastern winds, combine magically to impart a distinct flavour profile to the Ayvalik olive varietal. The Ayvalik olives for Zei are harvested early in the season, while they are still green and are beginning to change to purple. This ensures the unique flavour profile of this sought-after varietal is preserved at its optimal state.
