Hussein’s Colombian Aliñado or Sweet Bread Made from a Volcano

The bread was sweet. But the truth is watching Hussein’s three kids work together was even sweeter. Hussein’s kids Illena, Azhith and Odry were so comfortable in the kitchen it made me wonder how more parents can inspire our kids to pitch in. I have to admit, repeating versions of The Little Red Hen doesn’t seem to be working on my youngsters.  The secret? Hussein knows how to make cooking fun–using words like volcano and mountain to describe cooking techniques and allowing each child to put their own stamp on the final product. Hanging out with Hussein’s family also demonstrated that the lessons learned in the kitchen are life lessons–about how to compromise, make decisions and work as a team.

Hussein’s Colombian Aliñado or Sweet Bread



  • 6 cups all-purpose flour
  • 1 egg
  • 1/2 pound unsalted butter
  • 8 tablespoons powdered milk
  • 6 tablespoons sugar
  • 3 tablespoons evaporated milk
  • 24 grams instant yeast
  • 1 1/3 warm water
  • 1 tablespoon sugar
  • 1 tablespoon all purpose flour
  • Guava paste (optional)
  • Fresh cheese (optional)
  • 2 eggs beaten for varnish


  • Preheat oven to 360F
  • In a small bowl, dissolve warm water, yeast, sugar and flour. Let stand until frothy (about 7 mins)
  • Sift the flour and pour over counter. Open a large hole in the center of the flour mound as a “volcano” so ingredients don’t spill as they are added.
  • Add the salt by spreading evenly over the flour–preventing any from falling into the centre
  • In the hole, combine sugar, powdered milk, butter, 1 egg and yeast mixture.
  • Mix with fingers from the center until it forms a sticky dough
  • Knead for about 15 mins place in a bowl, cover with a cloth and set in a warm place for 20 mins or until it has doubled in size
  • After it has doubled in size place dough on a floured counter and roll until about 90 cm long. Cut into 18 equal parts
  • Roll out each piece of dough, place a small piece of cheese or guava paste (or both) and roll up being sure to seal ends
  • Place on a greased cookie sheet and varnish with 2 beaten egg
  • Cook  for 20 mins or until golden
