Troll Break: A Recipe To Soothe

 

The trolls are out in force this summer. These times are wild and crazy and the perfect breeding ground for malevolent online trolls. While innocently scrolling through cat memes, or slideshows of gardens bursting with blooms there is no escape from trolls – they are everywhere. Even on our own facebook page. We’re a grocery store! Leave us alone trolls! Go spread your ill will and angry vibes somewhere else.

Foraging judiciously for delicious edible plants in the wilds is a great way to get in touch with nature and add a little environmentally friendly wow factor to your dinner table. Every spring, it seems, people traipse through woodlands on a culinary quest for fiddleheads, ramps and dandelion greens, and summer lures into the forests and fields for morels and other wild mushrooms, and raspberries, wild blueberries, serviceberries and, if you live in Newfoundland, bakeapples. And, if you are lucky you can add another item to nature’s shopping cart the next time you’re foraging in the woods near a cold stream; watercress.

Chill out with these Chill Soups

In the winter there are few things as comforting and satisfying as a big bowl of hot soup, brimming with meat and root vegetables, a hearty soup with a slice or two of thick buttered bread is a winter favourite. But soup has its place on summer menus too. Chilled soups are healthy and delicious, and there’s something about a chilled soup that seems elegant and refined; a cold soup served on a sun-splashed patio usually elicits a murmuring of delight and even surprise. Maybe it’s because, as Canadians, when we think soup we usually think of the aforementioned hearty bowls of chunky, meaty winter soup, or have been inundated with images of children racing home to a steaming bowl of tomato soup, or vats of chicken noodle soup-Jewish penicillin-when someone goes down with a nasty cold. Summer Favoutites: Baba Ganoush

Okay it’s the first day of summer and for many of us that means the grill is getting a good workout; most proteins and vegetables and even fruit that are cooked, charred, or grilled are transformed by cooking on the outdoor grill, especially one that uses hardwood charcoal and is augmented by the addition of aromatic smoking provided by applewood, hickory or mesquite woodchips. Grilling and smoking are the tastes of summer, and, as the saying goes, everything tastes better outdoors (if it is cooked outdoors). One of our favourite dishes in the summer is baba ganoush, made from eggplants that have been roasted and smoked on the grill. Baba ganoush is the delicious meze, or appetizer that hails from the Middle East, with minor regional variations in Israel, Syria, Palestine and the other countries of the Levant. Typically the eggplant is roasted, the soft insides are scooped out and mixed with olive oil, tahini, lemon and garlic, a little salt and pepper and maybe garnished with some fresh herbs like parsley or cilantro. It requires very little care, meaning it is great for casual gardeners, or those that just want a lovely bushy plant to occupy-or encroach upon- a space, and both the leaves and flowers give off a lively, refreshing lemony aroma year after year. Lemon balm oil is highly prized in aromatherapy for its uplifting and calming effects, and its delicate little white flowers give off an alluring perfume that bees find irresistible; in fact, its scientific name is Melissa officinalis, Melissa being derived from the Greek word for bee.
