Sparkling Cocktails For Summer

Perrier PalomitaAt long last, after enduring one of the most gruesome winters in recent memory patiently waiting through a wet, cool spring, we can finally revel in warm, breezy afternoons and long, lazy nights. And while cocoa , warm spiced wine and rum toddies may be deemed essential to help us survive winter, summer also has a list of traditional pick-me-ups to help us cope with the weight of perfect sunny afternoons and sultry evenings: cold beers at the cottage, gin and tonics and Pimm’s Cups for the garden parties, mint juleps for the back porch and pitchers of sangria to share with friends on shady patios. Still, for many creative mixologists, new seasons mean a new opportunity to be inventive, to try new combinations, to re-invent classics with a new twist, and to take advantage of seasonal bounty, using fresh local ingredients.

One such inventive person is Sarah Parniak. Ms Parniak writes about libations, be it cocktails, beer, wine  or spirits for  Toronto’s Now Magazine. She has been an instructor at Toronto’s Institute of Bartending and she regularly shakes things up behind the bar at Cold Tea in Kensington Market.

On Thursday Sarah paired up with Arts & Communications and Perrier for the “Pop Up Perrier” event showcasing some great new and refreshing summer cocktails guaranteed to help you keep your cool and stay well ahead of the curve when it comes to imbibing. Here are a few of Sarah’s creations using Perrier –although you could use your favourite sparkling water as well. Enjoy responsibly!

Perrier Collins

Ingredients

  • 1 ½ oz  Tanqueray Gin
  • 1 oz Fresh grapefruit juice
  • ½ oz Fresh lime juice
  • ½ oz Simple syrup
  • 2 dashes Grapefruit bitters
  • 3 oz Perrier

Method

Stir ingredients together and pour into your favourite tumbler or tall glass with ice.

Tip: To make simple syrup: mix 1 to 1 sugar to water.

Instead of simple syrup, sweeten to taste with your favourite sweetener (sugar, honey, agave nectar, stevia, etc).

Zest a grapefruit peel to replace grapefruit bitters.

Down the Riviera

Ingredients

  • 1 ½ oz Ketel One Vodka
  • 2 ½ oz Fresh watermelon juice
  • 1 o Fresh lime juice
  • 1 oz Salted simple syrup
  • 8 Mint leaves
  • 5 oz Perrier

Method

Stir ingredients together and pour into a tumbler with ice.

Tip: To make salted simple syrup: mix 1 to 1 sugar to water; 1 tsp of sea salt to 2 cups syrup.

Instead of simple syrup, sweeten to taste with your favourite sweetener (sugar, honey, agave nectar, stevia, etc

 

Perrier Lucky No. 8

Ingredients

  • 1 ½ Zacapa Rum
  • 3 oz Pear Nectar
  • 1 oz Fresh lime juice
  • ½ oz Vanilla syrup
  • 2 dashes Angostura bitters
  • 5 oz Perrier

Method

Stir ingredients together and pour into a tumbler with ice.

Tip: To make vanilla syrup, mix 1 to 1 sugar to water and add vanilla extract. Instead of simple syrup, sweeten to taste with your favourite sweetener (sugar, honey, agave nectar, stevia, etc) plus 2 dashes vanilla extract.

Ingredients

  • 1 ½ oz Tequila Don Julio
  • 3 oz Fresh grapefruit juice
  • ¾ oz Honey syrup
  • ½ oz Fresh lime juice
  • 2 dashes Grapefruit bitters
  • 5 Strawberry slices
  • 5 oz Perrier

Method

Stir ingredients together and pour into a tall glass with ice.

Tip: To make simple syrup, mix 1 to 1 sugar to water. Instead of simple syrup, sweeten to taste with your favourite sweetener (sugar, honey, agave nectar, stevia, etc). Zest a grapefruit peel to replace grapefruit bitters.
