Zucchini is more than just bread. Here are the most inventive zucchini recipes to inspire and delight. It’s time for a zucchini party in the kitchen!

And let’s start with zucchini bread, but as waffles. Ree Drummond turns the ubiquitous bread into delicious waffles with cream cheese frosting. It’s like dessert for breakfast – so American!

Zucchini Parmesan Crisps are one of the most delicate preparations we’ve come across. They’re also extremely addictive. Don’t make this recipe unless you’re prepared to make it weekly for the rest of your life.

We’ve all seen zucchini used as a sub for noodles and it’s never truly mind blowing, but what about as a sub for stuffed pasta? It sounds crazy, but it works. Check out these stuffed zucchini “raviolis” with tomato sauce. Tomato is a wonderful partner for zucchini, especially in one of our favourite salads – capicola. Green olives, basil, currants and eggplant in an agrodolce sauce – nothing else says summer on a plate quite like this.

There are so many recipes out there, so much inspiration that it’s hard to nail down just a few. But these really stand out for their simplicity, vibrant flavours and unique uses of this often underutilized vegetable. Try Sesame Ginger Zucchini, or Spicy Thai Salad, or Zucchini and Feta Fritters. And then there’s all the vegan recipes! Like these sliders, sushi rolls, brownies and even a Green Goddess Dip.

Finally, the wildest recipe we could find. It’s simply called Crescent Pie, but what it actually is… Well, that’s another story. It’s a quiche, with zucchini of course, but the crust is, get this: Pillsbury Crescent Rolls pressed into service as the pie shell!

So many wonderful, and weird, ways to use zucchini – and those brownies are looking like a great place to start.
