Mango Cucumber Salsa
1 ripe mango, peeled and diced very small
1 small cucumber; diced very small
1 small plum tomato, diced
¼ cup mint, chopped
¼ cup basil, chopped
2 green onions, chopped
1 teaspoon extra virgin olive oil
juice of two limes
½ teaspoon dried chili flakes
sea salt and pepper, to taste.
Combine all ingredients, toss gently and refrigerate for about half an hour. Serve with Tortilla Chips and ice-cold beer.
