The latest in our Where To Eat on Instagram series takes us to @aimeebourque, and her Simple Bites blog, for a special bread that’s baked in tin can.
This is a bread for April, to make and enjoy in the lead up to Easter. There are a number of breads celebrating holidays throughout the year; among them, our favourite, Italian Panettone, as well as Russian Kulich, French Roscón de Reyes or Praluline, and the Jewish Challah*, among so many others. For spring, and for Easter, and as an intro to the wonderful Simple Bites, we are focusing today on Ukrainian Paska.
What makes paska unique is a very special ingredient that sits overnight – mashed potatoes!
Yes, that’s right. You need to make some dairy free mash and let them sit on the counter overnight to use as a starter in your paska dough.
Another thing that makes paska so special is the way it is baked – in tin cans. So save your large tomato cans and big apple juice cans. Have you ever baked bread this way? It’s so fun and it comes out with a shape that’s ridged to make for easy slicing.
