Angela Davis is a chef and recipe developer from Detroit known as The Kitchenista, and she’s got a message for y’all.
In a social media post this weekend she dropped some facts about ribs. Aware that many of us “Boil to get tender, finish on the grill, add sauce”, she wants to go on the record to say that’s not acceptable. And maybe you’ve always done it that way and don’t want to change… But if you know anything about how boiling meat in water works, you may need to consider a new method.
Davis sums it up perfectly, saying:
“All the flavour of the meat is just going into the water. You just made pork stock. Congratulations.”
